Pasta & Protein

  • 75 g dry pasta
  • 500 g roast chicken (shredded or chopped)

Vegetables

  • 1 onion, finely diced
  • 1 capsicum, diced
  • 125 g sweet corn
  • 1 avocado, cubed
  • Fresh coriander (to garnish)

Creamy Chipotle Dressing

  • 100 g low-fat yoghurt
  • 40 g cottage cheese
  • 10 g chipotle paste
  • 15 g lime juice
  • Salt (to taste)

  1. Cook the pasta: Cook pasta according to packet instructions until al dente. Drain and rinse briefly under cold water to cool. Transfer to a large bowl.
  2. Make the dressing: In a small bowl combine yoghurt, cottage cheese, chipotle paste, lime juice and salt. Whisk until smooth.
  3. Combine salad: Add onion, capsicum, sweet corn, avocado and coriander to the cooled pasta. Add roast chicken.
  4. Toss & serve: Pour the dressing over the salad and toss gently until evenly coated. Serve immediately or chill 20–30 mins for deeper flavour.
