This high-protein chicken pasta salad is perfect for meal prep, summer lunches, or a satisfying post-training meal. Itβs creamy, fresh, and packed with flavour without heavy sauces.

π Ingredients
Pasta & Protein
- 75 g dry pasta
- 500 g roast chicken (shredded or chopped)
Vegetables
- 1 onion, finely diced
- 1 capsicum, diced
- 125 g sweet corn
- 1 avocado, cubed
- Fresh coriander (to garnish)
Creamy Chipotle Dressing
- 100 g low-fat yoghurt
- 40 g cottage cheese
- 10 g chipotle paste
- 15 g lime juice
- Salt (to taste)
π¨π³ Method
- Cook the pasta: Cook pasta according to packet instructions until al dente. Drain and rinse briefly under cold water to cool. Transfer to a large bowl.
- Make the dressing: In a small bowl combine yoghurt, cottage cheese, chipotle paste, lime juice and salt. Whisk until smooth.
- Combine salad: Add onion, capsicum, sweet corn, avocado and coriander to the cooled pasta. Add roast chicken.
- Toss & serve: Pour the dressing over the salad and toss gently until evenly coated. Serve immediately or chill 20β30 mins for deeper flavour.
